CHICKEN WITH GREEN BEANS

        INGREDIENTS:

         Recipe serves 4-5 people

  • 650gr boneless chicken thighs
  • 1 kg frozen green beans
  • 1 carrot
  • 1 red onion
  • 2 garlic cloves
  • 1 can of diced tomatos (400gr)
  • 1 tablespoon tomato puree
  • 3 tablespoons chopped parsley
  • 4 tablespoons olive oil
  • 1 teaspoon sugar
  • 1 teaspoon paprika
  • salt
  • pepper


       DIRECTIONS:

   Dice the onion and the carrot and mince the garlic cloves. Put the olive oil in a pot at medium high temperature. Add the onion, the garlic and the carrot and saute for 2-3 minutes. Add the tomoto pure, the diced tomatoes, the parsley, the sugar, the paprika, the salt, the pepper and about 100mL of water. Cover the pot with a lid and let it cook at a medium low temperature for about 30 minutes. Transfer the green bean mixture in a pyrex removing the extra water if it is too much. Place the chicken thighs among the green beans and sprinkle them with salt, pepper, a little olive oil and some paprika. Bake it in a preheted oven at 200 degrees Celsious or 375 degrees Fahreneit for about 30-40 minutes or until the chicken is fully cooked. Serve it with some good quality feta cheese. Real, healhty, greek comfort food, great to be enjoyed with friends and family!
